Potato Parmesan Crusted Haddock

Potatoes and Bread, what's not to like? 
Guess I am a potatoes and bread kinda gal : )
I have prepared Haddock using several different techniques. Battered/Breaded and Fried,
Baked with a Mango chutney over the fillets...
tonight's Haddock is a
Potato Parmesan Crusted and Baked version.
 
My breading is Italian seasoned bread crumbs,
grated Parmesan cheese and instant potato spuds
mixed together.
Dip fish fillet into egg wash and coat in breading.
Place on oil sprayed cooking sheet, lightly spray with oil on top also and bake @ 375 degrees
approximately 20-25 minutes until done.

Fresh from the oven, golden brown.

 What's for dinner?
Potato Parmesan crusted Haddock
Sweet Potatoes and Russet Mashed and Brussels Sprouts.
