National Hot Dog Month - in my house A.K.A. Texas Hot, Coney or Chili Dog

July is National Hot Dog Month in the USA.  At my house, we prefer our dogs to be dressed up.  Some like the relish and ketchup condiment to be their preference.  For others, it is all about the sauce, A.K.A. Texas Hot, Coney or the Chili Dog in these parts of the USA.
Texas Hot Sauce 
    • 1 lb lean ground sirloin 
    • 4 cups water
    • 12 oz. beef stock
    • 1 (4 ounce) can tomato paste
    • 1/3 cup finely chopped onion
    • 1 tablespoon chili powder
    • 1 teaspoon salt
    • 1 teaspoon garlic powder
    • 1/4 teaspoon cinnamon
    • 1 teaspoon parsley
    • 1/4 teaspoon cayenne pepper (optional) 
In large pan put water, beef stock and tomato paste.   Add ground sirloin, break up ground sirloin. Add onion, chili powder, salt, garlic powder, cinnamon, parsley and cayenne pepper, to mixture mix well.
Simmer uncovered over low heat stirring often for 2 hours until the mixture becomes thick. Taste for seasoning, add black pepper to taste.
Allow to cool and keep in airtight containers.  Can be frozen.
