Thinking of Mom today and the aroma of fresh baked Oatmeal Cake with Coconut Topping that waited for us after school.

Oatmeal Cake with Coconut Topping
Ingredients:
1 -1/2 cups boiling water
1 cup cooking oats
1/2 cup soft butter
1 cup sugar
1 cup packed brown sugar
2 eggs
1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Topping:
1 cup packed brown sugar
1 cup coconut
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla
3/4 cup chopped nuts (optional) |
Pour boiling water over oats and let stand 5 minutes. In a mixing bowl cream butter and sugars. Add eggs to creamed sugars. Alternating with oatmeal mixture, add flour, baking soda, cinnamon and salt to the creamed sugars.

Cake mixture ready to go into a 9x13 greased baking pan. Bake at 350 degrees Fahrenheit until toothpick comes out clean. While cake bakes, start topping mixture. In saucepan bring the brown sugar, milk and butter to a boil. remove from heat stir in coconut, vanilla and nuts (optional). Pour over warm cake. |
Put cake under broiler and broil 2-4 minutes until topping brown. Do not burn. Cool cake before serving.
