Savory Chili Seasoned Baked Chickpeas

It's time for some kitchen experimentation, also known as, Pinterest inspired recipes!
Today, I am finally making Seasoned Baked Chickpeas.
The seasoning palate varies from the sweet cinnamon sugar to the garlic seasoned chickpeas.  I am trying my take with savory chili seasoned baked chickpeas today!
Start with a couple of cans of chickpeas.  Rinse and pat dry with paper towels.


Put in mixing bowl with 2 Tablespoons olive oil, 1 teaspoon cumin, 1 1/2 teaspoons chili powder, 1/2 teaspoon sea salt, 1 teaspoon paprika, and optional 1/4 teaspoon cayenne pepper for the heat.

Place on ungreased baking sheet, make sure one layer of chickpeas only.  Bake on 400 degrees Fahrenheit for 20 minutes.  Take out and cool chickpeas.  Place bake into oven for 15 to minutes additional baking time.  The chickpeas should not be moist when done baking, the are a crunchy treat. Allow to cool. before serving.

National Hot Dog Month - in my house A.K.A. Texas Hot, Coney or Chili Dog

July is National Hot Dog Month in the USA.  At my house, we prefer our dogs to be dressed up.  Some like the relish and ketchup condiment to be their preference.  For others, it is all about the sauce, A.K.A. Texas Hot, Coney or the Chili Dog in these parts of the USA.
Texas Hot Sauce 
    • 1 lb lean ground sirloin 
    • 4 cups water
    • 12 oz. beef stock
    • 1 (4 ounce) can tomato paste
    • 1/3 cup finely chopped onion
    • 1 tablespoon chili powder
    • 1 teaspoon salt
    • 1 teaspoon garlic powder
    • 1/4 teaspoon cinnamon
    • 1 teaspoon parsley
    • 1/4 teaspoon cayenne pepper (optional) 
In large pan put water, beef stock and tomato paste.   Add ground sirloin, break up ground sirloin. Add onion, chili powder, salt, garlic powder, cinnamon, parsley and cayenne pepper, to mixture mix well.
Simmer uncovered over low heat stirring often for 2 hours until the mixture becomes thick. Taste for seasoning, add black pepper to taste.
Allow to cool and keep in airtight containers.  Can be frozen.

Orange BBQ Chicken - Pinterest Inspired

Hi my name is Nancy and I am a Pinterest addict.  Pinterest recipes inspire me at least once a week.  The shortcut for Orange BBQ Chicken grabbed my interest a couple of weeks ago.  Alias, I did not pin it, but it inspired me to make my own version of the sauce.
 
1/2 cup barbecue sauce, 1/2 cup orange marmalade, 1/4 cup white grape juice, 2 teaspoons soy sauce, *optional for extra kick 1/4 teaspoon red pepper flakes blended together
Marinade chicken breast in sauce for 1 hour, cover in foil and bake in 350 degrees Fahrenheit oven for approximately 1 hour until chicken reaches 160 degrees Fahrenheit.

That's Creme de Menthe Cake Grasshopper!

We are in the midst of the "Too Much Rain and Heat" season in Central New York.  That said, it is time for a refreshing and easy dessert for Wild and Wacky Wednesday Dinner with the Boiz.  Enter Creme de Menthe Cake made from a cake mix.  Actually, I am making two, one for the Grasshoppers and one for a company pot luck lunch.
Ingredients:
1 white cake mix
3 eggs
1/4 cup oil
mint extract
1 cup (plus 3 tablespoons for frosting) Creme de Menthe
whipped topping
hot fudge ice cream topping
*I doubled recipe as I made two cakes, this is the recipe for one cake.

 
Mix dry cake mix, eggs, oil, 1 cup creme de menthe.
Pour into greased cake pans, 9x13.  Bake @350 degrees Fahrenheit for 25-30 minutes until done.  Remember, I doubled above recipe as I made two Creme de Menthe cakes.
Cool cake slightly.While cake still warm, frost with hot fudge topping so cold topping spreads easily..

Add 1 teaspoon mint extract to whipped topping and 3 tablespoons Creme de Menthe.  Frost cake over hot fudge layer and refrigerate overnight.  Creme de Menthe Cake must be kept refrigerated.

Strawberry Pie

Happy Birthday America!
Celebration picnic today includes Strawberry Pie for us.
The stars of the show:
12 oz. Sprite soda drink
1 small box strawberry Jello
16 oz or more fresh strawberries
2 Tablespoon corn starch mixed with 1/4 cup water
1 pie shell (baked)
whip cream

Mix Jello into Sprite with whisk.  Add corn starch mixture to Jello mixture in pan, it turns cloudy.  Heat and stir until mixture is clear.  Allow to cool.  While mix is cooling bake pie shell for approximately 10-15 minutes on 350 degrees until done.  Clean and sliced strawberries, filling shell.  When Jello mix has cooled pour over strawberries.  Put pie in fridge to cool and set up.  Add whip cream when serving.
