Fajita Quesadilla

I started out thinking Fajita tonight.  Half way through prep I switch to Quesadilla.
We'll call it my Fajita Quesadilla inspiration.

 Saute green peppers, onions and thin sliced beef.
 Add Fajita seasoning mix to pan.  Drain well after mix is completely cooked.
 Flour Tortillas
 Place Tortilla on baking sheet.
 Top with meat mix and cheese.
Add top tortilla.  bake @ 350 degrees Fahrenheit for approximately 5-7 minutes until cheese is melted.

Cut into wedge shaped pieces, serve with your choice of condiments.  We served them with salsa, sour cream and guacamole.

Cinnamon Pretzel Snack

Sometimes you want something salty, other times sweet.  And sometimes sweet and salty.
Tonight I decide to make a quick batch of Cinnamon Pretzel Snacks to nibble on while we cozy in for a movie.  Snowflakes in the air mid April calls for cozy fleece blankets and comfort food of Cinnamon Pretzel Snacks. 

Sometimes I throw a handful of pecans in with the pretzels, when I am feeling wild and crazy I roll with it.
Eat just one small handful.  Okay, two.  Very addictive, so three handfuls max.

Cake Mix PB Nutella Cookies

Get ready for it.  Jaws will drop in disbelief in my circle of friends and family with this confession, but I need to come clean. I don't bake Peanut Butter Nutella cookies from scratch.  I sorta half scratch it.  Don't judge me, just join me in the heavenly Cake Mix PB Nutella Cookie recipe.
1 yellow cake mix
1/2 cup oil
1/2 cup peanut butter
1/2 cup Nutella spread
2 large eggs
Mix all ingredients together until cookie batter dough forms.
 Roll into small balls and dip top in granulated sugar and make the traditional fork marks by pressing a fork into dough ball.  Kids love helping with this part.  Preheat oven to 350 degrees Fahrenheit.  Bake 8-10 minutes.  Makes approximately 48 cookies.
Pour yourself a glass of milk or a cup of coffee and enjoy.

French Bread

Ooh La La, French Bread Oui?
 Not just bread.  But fresh baked French Bread.
Fresh from the oven, warm, crusty on the outside and soft inside, glorious French Bread.
A French Bread or Baguette to devour. 
2 1/2 Cups warm water (110-115 degrees F)
3 packages of Rapid Rise Yeast
2 Tablespoons sugar
1 teaspoon salt
3 Tablespoons canola oil
5 1/2 -6 cups all purpose flour
 Add yeast over the 2 1/2 cups of water and then sprinkle the sugar over the water .  Let rest for five minutes until you see the yeast bubbles on top of mixture.

 Stir in the salt, oil, and flour.
Knead the dough for a 3-5 minutes until it is smooth and pulls away from the bowl.
 Cover bowl with a warm damp towel and let the dough rest for 15 minutes.

Roll the dough out into a rectangle.
Roll up, tuck ends under and place on greased baking pan.

Score the tops with a knife.  Allow to rest and rise 15 minutes.

 Bake @ 375 degrees Fahrenheit for  30-35 minutes until golden brown.Butter the tops when fresh from oven.
I put a pan of water in the oven under my baking bread for a crisper crust.  Let bread cool before slicing.

Amazing bread in an hour and a half, from bowl to table!

Tapioca Pudding

Tapioca Pudding. 
I passed by this in the grocery aisle. 
And then turned around a put a box in my cart.
Chalk it up to childhood memories of Mom
and her love of this dessert. 
Tonight's dessert is a flash back to the past kinda night,
plus there is a chill in the rainy spring air and
warm tapioca pudding just warms me from the inside out.
So into the pan with 1/3 cup sugar, 3 tablespoons Minute tapioca, 2 and 3/4 cups milk, 1 beaten egg. 
Stir, let sit 5 minutes.  Cook on medium heat until mixture comes to full boil. Remove from heat and stir in 1 teaspoon vanilla.  Pour in bowl to cool.
 Cover with plastic wrap while cooling to prevent skin from forming on top.
While the Tapioca Pudding is cooling time to add a topping of fresh blueberries.  A handful or two of blueberries, 1/4 cup water and 1/8 cup sugar. Simmer till berries are tender and sauce is thickened from reducing.  Remove from heat.  Cool for top of Tapioca Pudding garnish.

Potato Parmesan Crusted Haddock

Potatoes and Bread, what's not to like? 
Guess I am a potatoes and bread kinda gal : )
I have prepared Haddock using several different techniques. Battered/Breaded and Fried,
Baked with a Mango chutney over the fillets...
tonight's Haddock is a
Potato Parmesan Crusted and Baked version.
My breading is Italian seasoned bread crumbs,
grated Parmesan cheese and instant potato spuds
mixed together.
Dip fish fillet into egg wash and coat in breading.
Place on oil sprayed cooking sheet, lightly spray with oil on top also and bake @ 375 degrees
approximately 20-25 minutes until done.

Fresh from the oven, golden brown.

 What's for dinner?
Potato Parmesan crusted Haddock
Sweet Potatoes and Russet Mashed and Brussels Sprouts.

April Fools ...CNY style

April Fool's Day brought over night accumulation added up to 9 plus inches. 
April 2nd is a repeat and the April Fool's prank will not end, another 5 inches overnight is certain to "delight" us in the morn..

Bogart, the Bernese Mountain Dog would like to put a complaint in regarding spring's ETA.
