Oatmeal Cake with Coconut Topping

Thinking of Mom today and the aroma of fresh baked Oatmeal Cake with Coconut Topping that waited for us after school.

Oatmeal Cake with Coconut Topping

Ingredients:
1 -1/2 cups boiling water
1 cup cooking oats
1/2 cup soft butter
1 cup sugar
1 cup packed brown sugar
2 eggs
1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt

Topping:
1 cup packed brown sugar
1 cup coconut
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla
3/4 cup chopped nuts (optional) 
Pour boiling water over oats and let stand 5 minutes.  In a mixing bowl cream butter and sugars.  Add eggs to creamed sugars.  Alternating with oatmeal mixture, add flour, baking soda, cinnamon and salt to the creamed sugars.

Cake mixture ready to go into a 9x13 greased baking pan.  Bake at 350 degrees Fahrenheit until toothpick comes out clean.  While cake bakes, start topping mixture.  In saucepan bring the brown sugar, milk and butter to a boil.  remove from heat stir in coconut, vanilla and nuts (optional).  Pour over warm cake.
Put cake under broiler and broil 2-4 minutes until topping brown.  Do not burn.  Cool cake before serving.

 Oatmeal Cake with Coconut Topping is one of my favorite recipes from Mom's collection of after school treats.

DIY Solar Garden Luminaries

I love all the DIY Garden Luminaries that light porches, decks, walkways and gardens around my neighborhood.  I was inspired with all the sparkles of light on my evening walk earlier and decided to try a few recycled project DIY Solar Garden Luminaries of my own.
Start with a clean jar (spaghetti sauce in this example) and some glass gems from the dollar store.  You will need some of your favorite multi-use glue that dries clear and is weather proof.  I had some Halloween solar garden stakes from last year to use for my solar panel.

Remove the top portion of the solar garden stake, we will use the top portion with solar and light only.
The solar panel must be clear to absorb the sun.  Add cute shade.
Very cute for the outdoor table and patio : )
